Tell us a more about Ibiza Microgreens.
Microgreens are immature vegetables or herbs (e.g. broccoli, radish, pea, mustard) that are planted in soil and harvested before they become full size plant. Microgreens are vegetables and should not be confused with sprouts, not only do they look different , they are also grown and harvested differently.
To grow microgreens, regular seeds as used for regular vegetables/herbs and they are planted in soil. However only the steam and the leaves of the microgreen is used for eating. Studies have shown that microgreens have a very high and dense source of nutrition (up to 40% higher than its full-grown plant). They have high level of phytonutrients, antioxidants, vitamins, and minerals. Microgreens are also rich in enzymes, which enable them to be more easily digested. It really is a superfood ready to change the world!
Where do you source your seeds from and why is this important?
Our seeds are sourced from trusted and certified suppliers from Italy and England. Microgreens are very delicate and they get all their strength from the seeds so for this reason it is important that the seeds are organic and GMO free. We also insist on high standards for water quality, using only filtered water that’s controlled to ensure proper pH-value, meaning stress free growth for our microgreens. Both soil and water are locally sourced from the island so they really do live and breathe – it’s magic.
How do grow them on the island?
In a time where exploitation of land is increasing drastically and where clean and nutritious land get scarcer, it is time to think creatively. That’s why at our farm we approach agriculture in an innovative way by growing vertically, which means we only need to use square meters rather than acres. Vertical farming is a revolutionary and more sustainable method of agriculture than its counterpart as it lowers the requirement of water (using up to 90% less water than traditional farming) and saving considerable space and soil.
Who would benefit from eating them? Do you have a typical customer?
Microgreens are often added to dishes for colour, texture, intense flavour and fragrant aroma and our mission is to make the microgreens accessible to all on the island, from the culinary chefs cooking for their customers to parents preparing meals for their family, we want everyone to experience the magical benefits of having Ibiza Microgreens on their plate every day.
